Wine cellar Better Half is a small, family, boutique cellar situated in the villge of Zmeevo near Stara Zagora. The limited edition wines which do not exceed 2500-3000 bottles of a type fit into the garage wine concept. The vineyards are located in the foothills of the dormant volcano Betera and new plantings with interesting viarieties for the region are being created.
The cellar impresses with its technological techniques and the use of KVEVRI clay vessels from Georgia some of which have already been buried and the rest are yet to be buried. Egg-shaped fermentation and storage vessels from Italy are clear evidence of their modern interpretation on winemaking.
And all this in combination with modern stainless steel equipment that allows them to experiment with the same grapes. Part of the wines age in French oak barrels.
The philosophy of Better Half is to revive the ancient approach to winemaking and to combine it with brand new quality control and technologies.
An incredible guest house is yet to open adjacent to the winery which will be a combination of spaciousness, coziness, art and luxury. A combination that only the owners of Better Half can create.
As the owners Nikolay Dalakov (oenologist) and Yana Yugova (marketing, advertisement and trades) say “tourists stay in this magical place for a long time and do not want to leave”.
The visit to the cellar can be turned into a real culinary experience, but only if you make your booking in advance.
